Here is the most simple, yet delicious and filling recipe suitable for vegans, celiacs, weight-losers, but not for those who refuse to ingest carbs 😉
I used potato, zucchini, cauliflower and sweet potato for the actual soup itself. Peel, cut and prepare everything. Boil it for 25 min. (or to mush if you want), then use a hand blender to mush everything into a silky mash.
For flavor, I used fresh thyme, dried basil and some pesto, along with A LOT of salt and little bit of pepper. I saved some of the veg stock and added a ladle of it to a blender with my spices, to make sure everything mixes properly, and then I used the hand blender to mix it into the soup. I also added a bit of cream, but that can be left out easily so it’s vegan.
Vegan food is sort of challenging. It takes more time, effort and creativity. One must know what to combine and where to get flavor. My absolute favorite source of flavor are fresh herbs, which are also good for your health 😉
